Breaded Portabella Mushroom Ravioli with Leeks & Crispy Pancetta

Similar to bacon, Pancetta is cut from pork belly and then carefully cured. During curing, it often is seasoned with black pepper, cloves, nutmeg, cinnamon and herbs. Curing Pancetta can be done over several days or even several weeks. It is traditionally sliced very thin or cut into cubes.
