Spicy Sausage Risotto Bites with Smoked Mozzarella Fondue

Inspiration for this risotto bite comes from the Calabria region in Italy. There is a regional sausage called "nduja". It is made with spicy Calabrian peppers ground together with raw pork. The sausage is cured & smoked for 30 days. After this process the sausage is used as a spread on bruschetta and other accompaniments.
