Potato Gnocchi with Wild Mushrooms and Piave Stravecchio

Piave Stravecchio is a 14 -18 month aged cow's milk hard cheese produced in the Piave River Valley in the Italian region of Veneto. The Piave river originates in the Alps and flows down to the Adriatic Sea near Venice. The milk for Piave comes from the Bruna Alpina breed of cows which feed off of grass and flowers that grow in the Piave River valley and drink water from the highly mineralized Piave River, all of which are key elements for the DOP certification of this particular cheese
