Tri Color Lasagna with Parmigiano Reggiano Spuma

Named after the land in which it was created, the most famous sausage in ancient Italy was Lucania. During the reign of the Roman emperor Nero, sausages were associated with the Lupercalia festival, a pastoral event held to avert evil spirits and purify the city for fertility. This festival is believed by some historians to have been the true origin of Valentine's day. Today the land of Lucania is now known as modern Basilicata and the name of the ancient city represents a variety of modern sausages in the Mediterranean area of Italy.
