Florentine Stuffed Shells with Roasted Tomato Sauce and Balsamic Pearl Onions

In Italy the pasta shell is known as Conchiglie which simply means shell. The shape can be found in various sizes and was named after the conch species of edible sea snails which the shape closely resembles. These sea creatures classified as mollusks are enjoyed raw in salads or in many cultures cooked in fritters or soups. In the US these culinary delicacies can be found largely popular in parts of Florida and the Virgin Islands.
