Five Cheese Mezzaluna with Lemon-Mint Oil and Sunchokes

Sunchokes, also known as Jerusalem Artichokes, were originally cultivated in North America by the native Americans. They reached Europe by the 1600's and are used widely thought Italy where they are called 'topinambur' or 'Carciofo di Gerusalemme.' They are also known in some parts of Europe as 'girasole articiocco' or 'sunflower artichoke,' named after the resembling species of flower.
