Fonduta Large Square with Braised Short Ribs and Mushroom Broth

Fonduta or 'Fonduta alla Valdostrana' is a recipe from the mountainous Italian Aosta Valley neighboring Switzerland. The traditional recipe always features white truffle and is believed to be one of the possible origins of modern Fondue. Other parts of Europe and specifically Switzerland are also well known historically for fondue which has evolved into a multitude of different savory and sweet varieties, usually served in a communal pot.
