Smoked Mozzarella Ravioli with Blackened Shrimp

Inspired by southern flavors of the US this Cajun dish is prepared in a cast iron skillet which is still considered to be one of the best nonstick cooking vessels. The heavy nature of the metal also allows for great heat retention and is used in Italy for a unique cookie called the 'pizzelle' which is cooked and pressed in a similar fashion to a Belgian waffle.
