Veal and Portabella Ravioli with Shaved Turnip, Wilted Spinach, Speck and Barolo Reduction

Barolo wine is produced in the northern Italian region of Piedmont. The verity of grape used is known as the Nebbiolo grape and there is much dispute on the style this wine is produced as far as aging and the type of wooden barrels used. This dispute between modern wine makers and traditionalists has grown so large it is referred to as 'the Barolo Wars.
