Ingredients
32 sacchettini
1 lb ripe beef steak tomatoes
1 tbsp double concentrate tomato paste
4 garlic cloves, whole
Crushed chili pepper tt
4 tbsp extra virgin olive oil
4 tbsp minced parsley
Pecorino Romano
Directions
Blanch, peel and seed tomatoes. Cut into small dice. Heat olive oil, briefly sauté garlic and crushed chili flakes. Add paste and ½ cup water. Simmer for 15 minutes. Season with salt then fold in parsley. Fry sacchettini at 350 F for 1 minute, sprinkle with Pecorino and serve with hot sauce.
