Grana Padano Sacchettini with Roasted Mediterranean Vegetable Soup
The Mediterranean has many eclectic varieties of cuisine due to its blend of cultures. Influenced primarily by Italy, Greece, Spain and France there are many similarities in ingredients because of shared climate and economy within the region.

Ingredients
24-30 sacchettini
1 ea zucchini
1 ea small eggplant
1 ea yellow squash
1 ea roasted red pepper
1 garlic bulb
2 quarts Chicken Broth
TT Salt and Pepper
1/8 lb Butter
TT Fresh Herbs
Directions
Seed and Dice all vegetables to desired size. Oil and roast the vegetables until tender but not browned. Remove 1/3 of the cooked vegetables and puree with some of the chicken stock into a broth. In a pot sweat onions and garlic with butter, Add the remaining vegetables, chicken stock and vegetable broth. Reduce, season and finish with fresh herbs.
