Beef & Pork Cannelloni Bites with "Salmoriglio Rosso"
"Salmoriglio" is a condiment from the South part of Italy used on grilled meats and seafood. It is usually made with olive oil, parsley, oregano and lemon juice. "Salmoriglio rosso" (red salmoriglio) is an interesting twist to the classic recipe with the introduction of tomatoes and crushed chili flakes.
Ingredients
- 24 cannelloni bites
- 2 lb ripe Roma tomatoes, seeded and peeled
- 2 garlic cloves, minced
- ½ cup olive oil
- 1 tsp. crushed red pepper
- 1 tbsp. fresh oregano, chopped
- 2 tbsp. fresh parsley, chopped
- 1tbsp. lemon juice
- 1 tsp. sugar
- TT salt
- TT parmesan cheese (optional)
Directions
Place tomatoes, oregano, parsley, crushed red pepper and garlic in a food processor and blend until smooth. Add olive oil slowly while mixing on a low setting. Season with salt and sugar. Refrigerate for 2 hours before using. Serve salmoriglio with hot cannelloni bites.
