"Salmoriglio" is a condiment from the South part of Italy used on grilled meats and seafood. It is usually made with olive oil, parsley, oregano and lemon juice. "Salmoriglio rosso" (red salmoriglio) is an interesting twist to the classic recipe with the introduction of tomatoes and crushed chili flakes.
