Caesar Salad was created by restaurateur Caesar Cardini, an Italian immigrant who operated restaurants in the US and Mexico. Cardini invented the dish when a Fourth of July rush in 1924 depleted his restaurant's kitchen supplies. Cardini made do with what he had, and improvised a tableside salad for his guests. Contrary to modern recipes the original Caesar salad didn't contain anchovies other than the slight flavor contained in Worcestershire sauce.
