Chicken and Artichoke Cannelloni Bites with Red Onion Aioli
Aioli is an emulsified sauce made of garlic, olive oil, lemon juice and usually egg yolks. There are endless variations by adding seasonings, mustards and vegetables.
24 Cannelloni bites
1 ea eggs, separated (yolk only)
½ cup olive oil
½ ea lemon (juiced)
1 ea clove garlic (paste)
1/8 ea red onion (minced)
TT salt and pepper
TT Parmigiano Reggiano
Whip egg yolk while slowly incorporating olive oil being careful not to break. Add garlic, onion, lemon juice and seasoning and adjust consistency with water only if necessary. Fry cannelloni bites to a golden brown then pair with aioli and garnish with shaved Parmigiano Reggiano and fresh chopped parsley.
