Guacamole first originated with the Aztecs in Mexico somewhere around the 16th century. This avocado based dip has become vastly popular in the US and is a great accompaniment especially for nachos.
24 breaded ravioli
2 ea avocadoes (skin and pit removed)
1 ea tomato (diced)
2 ea fresh limes (juiced)
2 Tbsp cilantro (chopped)
½ ea small red onion (minced)
1 ea jalapeño pepper (minced)
TT salt and pepper
TT queso fresco
Dice avocado then mix with all other ingredients well to incorporate flavors. The ripe avocado should mash easily; incorporating some chunks is preferable. Fry ravioli until golden brown. Then pair with guacamole and garnish with queso fresco.
