Bacon Mac & Cheese Bites with Chorizo and Sweet & Spicy Dipping Sauce
Chorizo likely originated in Catalonia. In addition to Mexican and Spanish cooking, chorizo is also used regularly in Portuguese, Puerta Rican, Panamanian, South American, and Filipino cooking. Chorizo is usually seasoned with smoked paprika and peppers, which gives this sausage its red tint.
Ingredients
- 5 Mac & Cheese Bites
- 1 large link chorizo sausage, sliced
- SAUCE
- 3/4 cup pineapple juice
- 2 tsp ketchup (or Australia/UK tomato sauce)
- 2 tsp+ hot sauce of choice (Franks etc, adj to taste)
- 2 tbsp brown sugar , packed
- 1 garlic clove , finely chopped or minced
- 1/4 tsp salt
- Pepper
- THICKENER
- 1 1/2 tsp cornflour / cornstarch
- 1 tbsp water or pineapple juice
Directions
Mix together Sauce in a bowl, then mix together thickener in a small bowl. Simmer Sauce for 3 minutes. Add thickener and mix quickly, then simmer for 45 seconds to 1 minute until thickened. Slice chorizo into slices and fry over medium heat until browned. Deep fry Mac & Cheese Bites in 350ºF oil for 3-4 minutes.
