Ingredients
24 mac and cheese bites
8 Grape or cherry tomatoes
2 San Marzano tomatoes, canned
1 small onion , diced
1 carrot, diced
1 celery stalk, diced
6 fresh basil leaves
1 garlic clove whole
3 tbsp extra virgin olive oil
2 tbsp sour cream
Crumbled bacon for garnish
Directions
Sweat onions, carrots, celery and garlic with olive oil in a pot. Add San Marzano tomatoes and basil leaves and cook for 15 minutes. Puree until smooth then strain any remaining solids out of the soup. Season to taste. Garnish soup with drops of sour cream and bacon crumbles. Fry Mac & Cheese Bites at 350ºF for 3-4 minutes and skewer with grape tomatoes. Serve atop tomato bisque.
