Southwestern Salad and Jalapeno – Cream Cheese Stuffed Nachos
Southwestern food is a rustic type of cuisine from the southwestern states in America. Its origins have ground in the Spanish colonial settlers, Native Americans and cowboys in the 16th century. It is influenced by Mexican flavors with the exception that it's normally served with meats; grilled, smoked or roasted.
Ingredients
- 12 stuffed Nachos
- 2 eggs, hard boiled
- 3 limes
- 4 cups Romaine, chopped
- 1/2 lb cherry tomatoes
- 1 Corn on the cob; roasted and kernels removed
- ½ cup black beans
- ¼ cup red onion, thinly sliced
- 1 avocado, sliced
- 2 tsp Chipotle in Adobo Sauce
- 1/3 cup EVO
- Salt and pepper
Directions
Combine together lime juice, EVO and chipotle in adobo sauce. Toss romaine, cherry tomatoes, black beans, corn and red onions with lime dressing. Serve salad with sliced eggs, avocado and Stuffed Nachos.
