Chipotle peppers are red jalapenos that have been smoked so they're not only spicy, they have a deep, rich and smoky flavor.
20 Jalapeño and Cream Cheese Stuffed Nachos, fried
2 jalapeño peppers, halved and seeded
4 large avocados, pitted
1/4 cup lime juice
2 cloves garlic, minced
1 1/2 tsp salt
1/2 tsp ground cumin
2 chipotles in adobo sauce, minced
1 small ripe tomato, seeded and finely chopped
1/3 cup chopped cilantro
1/4 cup finely chopped red onion
Grill jalapeños until blistered and tender. Let cool completely; chop. Mash together avocados, lime juice, garlic, salt and cumin until almost smooth but still slightly chunky. Stir in chipotles until well combined. Add jalapeños, tomato, cilantro and red onion to avocado mixture. Stir until well distributed.
