Toasted Sausage Ravioli with Pepper Jack Dipping Sauce
Pimento also known as a cherry pepper is a chili pepper similar in appearance to a smaller red bell pepper. The flavor of this pepper is more sweet and aromatic than a regular red bell pepper and is traditionally used to stuff Spanish green olives, like those found in a vodka or gin martini.
Ingredients
- 24 toasted ravioli
- ½ cup heavy whipping cream
- 10 oz pepper jack cheese (shredded)
- 1 small can pimento (diced)
- ¼ cup heavy whipping cream
- 6 oz sharp cheddar (shredded)
Directions
In double boiler bring the ¼ cup of heavy whipping cream to 165°F then add sharp cheddar and blend until melted. In double boiler bring the remaining whipping cream to 165°F and add pepper jack cheese. Stir until melted then place in serving dish. Place in squirt bottle. Top pepper jack cheese sauce with cheddar sauce add diced roasted red peppers.
