Butternut Squash Ravioli with Smoked Mozzarella Sauce, NY Strip Tagliata and Montepulciano Reduction
Mozzarella Affumicata or smoked mozzarella is a cow's milk spun cheese, belonging to the same family as mozzarella and provolone. It is similar to provolone in its pear-shaped. This shape is achieved by tying the forms together to hang during the ripening-smoking process.
Ingredients
- 24 ravioli
- 1 lb NY strip steak
- 2 cups Montepulciano wine reduction
- 1 bouquet garni
- 2 cups Besciamella (béchamel)
- 8 oz smoked mozzarella
- TT salt and pepper
- TT smoked mozzarella
- 1 shallot, minced
- TT butter
- Truffle salt
Directions
Heat butter and saute shallots. Add béchamel and bring to a simmer. Fold in smoked mozzarella, whisk until completely melted. Season with salt and pepper. Reduce wine with bouquet garni on low heat until syrupy. Adjust with light brown sugar and salt. Season steak with truffle salt and pepper. In a cast iron skillet saute steaks to a medium rare temperature, then allow to rest and slice. Blanch ravioli and toss with smoked mozzarella sauce. Serve immediately with NY strip tagliata and drizzle with Montepulciano Reduction.
