Cheese Sacchetti "all' Amatriciana"
In Italy 'Amatriciana is a regional spicy tomato sauce from the city of Amatrice, near Rome. It is traditionally made from pigs cheeks and finished with pecorino cheese. In Italy, the Amatriciana sauce is normally paired with bucatini pasta (a thick spaghetti hollow in the center.)
Ingredients
- ¾ - 1lb sacchetti
- 4 oz. pancetta or guanciale
- 1 medium onion (chopped)
- 1 garlic clove
- TT red pepper flakes
- 2 tbsp olive oil
- ½ cup pecorino Romano
- ½ cup white wine
- 12 oz peeled tomatoes (crushed)
- TT salt
- Fresh basil
Directions
Cook pancetta until lightly browned then add onions, garlic and red pepper flakes. Briefly sauté ingredients and deglaze with wine. Add tomato and simmer for 15 minutes. Season with salt. Blanch sacchetti then strain and toss in the sauce with chopped basil and Pecorino Romano.
