Cheese and Caramelized Onion Tortelloni Bake with Lump Crab Meat

Ingredients
36 tortelloni
2 tbsp butter
1 tbsp all-purpose flour
2 c. half & half
½ c. heavy whipping cream
2 oz. cream cheese
12 oz. lump crab meat
½ c. shredded Gruyere cheese
1 c. grated white cheddar cheese
½ tsp fresh thyme
½ tsp Dijon mustard
1 tsp onion powder
1 dash ground nutmeg
1 dash cayenne pepper
salt and pepper to taste
Directions
Thaw tortelloni. Preheat oven to 375ºF and grease a large (or four small) baking dishes. Melt butter in a large sauce pot. Add flour and mix, and cook for 1-2 minutes on low heat to make blonde roux. Slowly add cold half and half, whisking between additions to prevent lumps. Cook sauce for 5 minutes, then add heavy cream, cream cheese, Dijon mustard, fresh thyme, onion powder, nutmeg, cayenne pepper, then season with salt and pepper. Mix Gruyere and 1 cup of white cheddar with tortelloni and crab meat. Add cheese sauce and mix well. Pour into baking dish and top with rest of white cheddar. Bake at 375ºF for 30 minutes and let stand 10 minutes before serving.
